Heat the air fryer to 210°C
In a mixing bowl, stir the soy sauce, mirin, sugar and sherry together until the sugar has dissolved.
Add the partridge pieces, turning to coat. Cover and leave to marinate for at least 1 hour.
Take the partridge pieces out of the marinade and cook in the air fryer for 12 minutes or until cooked, turning frequently.
When cooked, transfer the partridge pieces onto a plate, lightly cover with foil and allow to rest.
Place the remaining marinade into a small saucepan, add the cold water and bring to a simmer. Reduce a little until the marinade has thickened slightly.
Serve the partridge with steamed jasmine rice and some greens (such as stir-fried Pak Choi).
Sprinkle with sesame seeds and spoon over a little of the sauce.
