A Passion for Seafood
Our wet fish and langoustine, along with our cold smoked ChalkStream trout, are provided by A Passion for Seafood, which was founded by Suffolk seafood writer and consultant Mike Warner at the start of the pandemic in 2020. Mike began buying and selling fish from his numerous contacts to help local fishermen access new markets when existing ones collapsed. The project was a great success and today A Passion for Seafood provides chefs and fishmongers with a reliable and diverse source of seasonal, traceable, native fish and shellfish from UK waters.
Wightman Fishing Co
Our smoked haddock, mackerel and kippers are supplied by Wightman Fishing Co, which has been based in Lowestoft’s historic fish market since 1937. Now headed up by Steve and Emma Wightman, they catch and deliver in true “net to plate” style – Skipper Steve operates the Georgie Girl LT 1042 from Lowestoft Harbour. Fish they cannot catch themselves are purchased from East Anglian inshore fisheries or other trusted fishermen.
Smoking takes place in Lowestoft too – the rich and deep flavour of their smoked fish is created by skilful brining and kiln-smoking over oak chippings and sawdust for up to 36 hours.
